Ramen Noodles Salad

Makes: 10-12 serving

2 Packages (3 ounces) of Beef-flavor ramen noodles
2 medium carrots (grated)
1 medium red pepper (finely diced)
2 stalks of celery (finely diced)

3 cups coleslaw or medium size cabbage (finely diced)
1/4 medium red onion (finely diced)
1/4 cup cilantro (chopped)
2 tablespoons toasted sesame seeds
1/4 cup roasted peanuts (can sub almonds or cashews)

Sesame Dressing:
2 tablespoons sesame oil
1 tablespoon lemon juice
2 tablespoons white sugar or honey
1/4 cup rice vinegar
2 teaspoons soy sauce (gluten-free if needed)
1 teaspoon ginger (grated)
1 small garlic clove (grated)
A pinch of sea salt


  1. Crush ramen noodles packet.

  2. Combine all the sesame dressing ingredients in a small jar and shake it well.

  3. Combine the Asian salad ingredients in a medium-sized bowl.

  4. Pour the dressing over the top.

  5. Toss everything together.



  • Nuts are optional. 

  • If there's anyone allergic to nuts and tree nuts, remove them from the list
