Chocolate Lava Cake

Makes 4 serving

Prep time 10 minutes

Cooking time 12 minutes

 

INGREDIENTS

2 sticks butter (unsalted)

1 cup semi-sweet chocolate chips

3 tablespoon granulated sugar

2 large eggs (room temperature)

1/2 teaspoon vanilla extract

1/2 teaspoon baking powder

3 tablespoon all purpose flour

TOPPINGS

- Powdered sugar

- Vanilla Ice Cream

- Caramel

- Whipped cream

- Nuts 

- Fresh fruits

- Or any desired toppings

DIRECTIONS

  1. Prepare 4 ramekins - brush each ramekins with butter and set aside.  Pre-heat over for 400 degrees centigrade.

  2. In a medium bowl melt chocolate chips and butter.  You can use double boiler or microwave.  Place in the microwave for 1 minute and 30 seconds. Stir until melted and put them aside.

  3. In a separate bowl, beat eggs  for 2 minutes and add sugar, mix together until sugar dissolved, then add vanilla extract.  Add all purpose flour and mix together until smooth.  

  4. Pour in chocolate mixture and stir until it become smooth and fluffy.

  5. Pour mixture into the Ramekins equally and bake for 11-12 minutes.  The edges must be firm and the center is soft.  Carefully and gently poke the center of the ramekin to check if it is done.  The center should be jiggly and not fully set.  If its liquidy add another 1-2 minutes in the oven. 

  6. Let the lava cake cool for 3 minutes.

  7. To serve, invert the lava cake by gently placing serving plate on top and flip, let it sit for 5 seconds and remove the ramekin.

  8. Add toppings and enjoy!
