Chicken Carcass Soup

Makes 8 serving 

Cooking time 1 hours 20 minutes

 

INGREDIENTS

Chicken carcass bones and meat

Leftovers chicken gravy and juices

4 cups of chicken broth

2 celery sticks (minced)

1 medium carrots (chopped)

1 cup potatoes (cut an inch size)

1 cup egg noodles

1 teaspoon olive oil

1 gloves garlic

1/2 cup onion (chopped)

salt and pepper to taste

 

DIRECTIONS

  1. In medium pot put oil then cook garlic until golden brown add chopped onions.  Put chicken meat, gravy, juices, and broth. Separate chicken carcass in a metal strainer and dip it in the pot.  Slowly add celery, carrots and potatoes.  Cook for about 30-35 minutes or until potatoes are completely cooked.

  2. Remove the metal strainer with chicken carcass and add egg noodles, cook for about 7-8 minutes until completely cooked.

  3. If you think the liquid is low, add more water or chicken broth.  

  4. Add salt and pepper to taste.  Serve with garlic bread or your favorite bread.
