Norwegian Pancake on Hurricane Dorian

Happy Labor Day and not so happy for Hurricane Dorian approaching this way! People are busy preparing for the Hurricane to arrive. The biggest part of preparation for me is what to eat when electricity is down. I just hope we get everything we need when time comes.

While we still have power (I hope we do not lose power at all) I thought about making breakfast something out of the ordinary. A Norwegian Pancake (photo below) - my family typically likes anything sweet. There you go! See recipe below.

This easy and simple recipe was modified the way I wanted it to be. The result is exactly how I want it. Smooth, fluffy and not too sweet. I added a little sugar in the mixture to start with a little sweetness into it, however by adding condiments on the outside like the powdered sugar and syrup makes it even more enjoyable.

Ingredients:

Makes: 8-10

1 cup all purpose flour

2 eggs

3 tablespoon sugar

1 cup milk

1/3 melted butter

1 teaspoon vanilla extract (optional)

1/2 cup of water

pinch of salt

Condiments: Powdered sugar and syrup with fresh strawberries. I added mango jam and strawberry jam for filling. You can pick whatever ready-made filling you like.

Instructions:

1. In medium bowl, mix all ingredients start with flour and eggs, stirring continuously until it become smooth

2. Heat pan in low-medium heat, add mixture in the pan covering the pan surface for about 1 minute and flip. Wait until golden brown and transfer to the serving plate.

3. Repeat until all mixture is finished.
